Ingredients for 4 servings
300 g of flour
4 pinches of salt
Mix the ingredients together, trying to make the mixture rather liquid.
Pour into a hot greased pan; cook the batter on both sides as if making a crêpe.
This is very simple but very tasty dish, served either with pesto sauce or with olive oil and grated Parmesan cheese.
For the best results, it should be good to use the traditional testetti, terracotta bowls, which are stacked and placed over a wood fire for cooking.
The testetti are locally produced in Iscioli, a village laying in the Graveglia Valley, in the hinterland of Lavagna.
