Portofino Coast Gourmet: Cubeletti from Rapallo
are tasty shortcrust pastries filled with quince jam and prepared in special molds that give them the shape of small baskets.
Cubeletti, that in 2012 obtained the “Municipal designation of origin”, are a traditional recipe that is produced in a historic pastry shop of Rapallo since 1862
These traditional sweets, halfway between a biscuit and a small pastry, at one time were prepared as small “panettoni”, very different from the actual shape. Nowadays Cubeletti are prepared all year round but according to tradition they were the typical pastries of Saint Agata feast, on February 5th.
